I think the main thing is to be incredibly passionate about building an INSANELY great product. Any startup can do that much faster and better than the bigger companies, and if you are lucky with timing and market conditions then you'll get snapped up. I've seen this happen time and again here in the valley.
Of course, the other part is that when Google or any other company makes you an offer don't get too greedy (easier said than done). :-)
